I have been on a cleanse and PURE for 5 days now!  All in order to improve my gut health!  It has been tough, especially giving up coffee…WHAT!? I have been coffee-less for over 1 week now!  I tried a cleanse earlier and couldn’t make it past two days and I thought it was due to caffeine.  However, I believe it was the sugar.  The diet that I have been on consists of no sugar, no yeast, no carbs and no dairy!  I know, I might as well surrender now!

Avocado Joy

Well, I tell you!  I have never experienced withdrawal before and it was pretty bad!  Mood swings, brain fog, cold chills and low energy!  I was sleeping a lot, had no appetite and could barely make it through a day.  It was all normal symptoms of my conditions due to starving off the bad bacteria, craving sugar in my system.  It is day 8 and I have had 2 nights of cheating, couldn’t resist having dinner at our friends place and a night out. However, its starting all over again once you indulge.

I am finally feeling better with higher energy levels!  I have become more creative with my meals and enjoying them!  I was getting sick of eating arugula, cabbage and other greens.  This recipe has been my favourite so far!  Avocado Kale Omelette, it is absolutely delicious!!!  Why didn’t I think of it before?  Brett says that I could sell it!  It is so healthy, carb-free, dairy-free full of vitamins and protein and quick and simple.  Cleansing has gotten much better, but I can’t wait to go back to sweets, cheese, bread, coffee and wine!

What a great way to start your day with this Avocado Kale Omelet! It is packed with goodness and absolutely delicious!
Recipe type: Breakfast,Brunch,Lunch
Serves: 1-2
  • 2 shallots, chopped
  • 2 garlic cloves, chopped
  • 3 eggs
  • ¼ tsp cumin and a pinch of cayenne
  • salt, pepper and chilli flakes to taste
  • 1 avocado, halved and sliced
  • 6-7 black olives
  • 1 tbsp coconut oil
  • 1 cup of fresh kale
  • 1 tsp sesame seeds (optional|)
  1. Whisk the eggs, seasoning and spices in a bowl and set aside.
  2. Heat the coconut oil in a pan on medium heat. Saute the garlic, then add the kale, sesame seeds and shallots and cook until slightly brown. Set aside.
  3. Now add the eggs mixture to the pan and let cook for 3-5 minutes or until cooked
  4. Spread the shallots, kale and garlic evenly over the eggs and transfer to a plate.
  5. Add the avocado, olives, and the remaining kale to one side of the omelette.
  6. Fold over and serve.
