Baked Banana Pie

I first had this Baked Banana Pie in Nicaragua at Los Cardones Surf Lodge and fell in love!  So tasty and so unique, unlike anything I have had before! If you are a banana fan? THIS IS FOR YOU!  It is not fluffy or creamy, but banana-y!  There is coconut milk in it so it gives it a beautiful aroma and of course, it is best eaten warm like any pie.  However I can have this at any temperature and I am sure you will too!

Graham Cracker Crust  7 minutes in the oven and pour the banana filling in

The graham cracker crust is easy and delicious! It consists of graham cracker crumbs, butter and sugar and only takes 7 minutes in the oven.  Once it is ready, just pour your banana filling in and bake in the oven until it is golden brown.  A-mazing!!!  

Baked Banana Pie for you

The last time we were at the lodge, I refrained from it due to the no sugar diet/cleanse that I was on. Of course I had a taste as it came right out of the oven and still warm.  Blissful and heavenly!  It was the biggest tease,  just having a mere taste. But I was incredibly strong and stuck with it throughout my holiday.  They also made a chocolate pie and passion fruit pie that I will have to try out next :) I have been dreaming about this ever since and have been testing it and re-creating it.  I have experimented with a few different crusts, none of them can compare to the one at Los Cardones, but this graham cracker crust is so far my favourite, EASY and delicious in combination with this Baked Banana Heavenly Pie.

Going Bananas!!!  It is really simple, so just bake and enjoy!

A dreamy Baked Banana Pie made with coconut milk on a graham cracker crust. The consistency is perfect and the taste is perfectly sweet! You will love it!

Ingredients
  • 1½ cups finely ground graham cracker crumbs
  • ⅓ cup white sugar
  • ⅓ cup butter, melted
  • For the Banana filling
  • 4 overripe bananas, mashed well
  • 2 eggs
  • ½ cup sugar(if the bananas aren't that ripe, add more sugar)
  • ¼ cup butter
  • ½ tsp salt
  • ½ tsp vanilla
  • 1 tsp cinnamon
  • ¾ cup coconut milk
  • 1 banana sliced for garnish and topping
Instructions
  1. For the Graham Cracker Crust
  2. Pre-heat oven at 375 F
  3. Mix graham cracker crumbs, sugar, melted butter until well blended .
  4. Press mixture into a 9 or 10 inch pie plate.
  5. Bake at 375 degrees F (190 degrees C) for 7 minutes. Set aside to cool
  6. For the banana filling
  7. Mix all the ingredients really well in one large bowl.
  8. Pour into your 9” deep pie shell.
  9. Top with banana slices
  10. And bake for 40-45 minutes or until your pie is golden.
