Baked Salmon with Miso Dressing

Japanese MayonnaiseThere are a few things about living in Japan for 2 years  that surprised me about the culture.  Firstly, the amount of beer that they consume and secondly their love of maiyo neizu, mayonnaise.  Japanese mayonnaise probably comes second to soy sauce in the condiment department and that was a shock to me!  However, after trying Japanese mayonnaise I completely understand the addiction.  It is smooth, creamy, dreamy and goes with everything!  The Japanese use it straight on top of rice, with tempura, fried chicken, sushi, sandwiches, pasta and it is especially delicious mixed with sriracha or miso and even wasabi.   It is so generously and widely used, I would say it was in our meal every evening or at least on the dinner table waiting to be squeezed.

Today is about the miso and mayo combination!  It is lovely!  a salty, creamy, tasty flavour that goes beautifully with salmon.  This is such an easy recipe and there are 4 simple steps:  1.  Season the salmon 2. Load it with veggies 3. Add the miso dressing 4. Wrap and bake.  You can virtually use any vegetables, mushrooms go really well, I used shimeji mushrooms, corn and green onions this time around, but I have also used leeks, cauliflower, broccoli and shitake mushrooms.  Unwrap it from the foil and it is steaming hot and ready to be served with white rice.

This healthy salmon dish is so tasty and easy to make, load it up with your favourite vegetables, wrap it up and bake it in the oven or it can be grilled. Perfect with white rice.

  • 16 oz of salmon (1 large fillet) or 4 4 oz pieces to be wrapped in foil individually
  • salt and pepper
  • a bit of oil
  • Vegetables of your choice cut in bite-size pieces: shimeji or shitake mushrooms, corn, green onion, leek, cauliflower or broccoli
  • Miso Dressing
  • 2 tbsp miso
  • 3 tbsp mayonnaise
  • 1tbsp soy sauce
  • Aluminum foil
  1. Pre-heat oven to 400F
  2. Add a bit of oil on a large piece of foil, the foil should be large enough to cover the salmon then be sealed
  3. Place the salmon, skin down
  4. Place veggies on the salmon
  5. Mix all ingredients for the miso dressing in a bowl and then pour over salmon
  6. Wrap it up in the foil and place in the oven and bake on the bottom rack; for a medium size fillet about 18-20 minutes or until it becomes an opaque pink.
