Today is one of those days that has felt long for me.  Which is a rare occurrence!  I am thoroughly enjoying it as I am used to running around and before I know it the day is done.  Dinner tonight is Pupusas!  I was craving something different, but wanted to work with what I had at home so I turned to my handy Lonely Planet “The World’s Best Street Food”  for inspiration!  Salvadoran cuisine it is tonight!  I am missing a few ingredients so hope to blog this another time.  I am sure my family will be happy to have freshly made Pupusas which will be stuffed with meat and cheese and served with salsa and Curtido!  I know I am looking forward to it!

Banana Pineapple Overnight Oats

I am still enjoying my oats whether it is in cookies, granola or in this case soaked overnight in Almond milk and Greek yogurt, tossed up with some of my favourite ingredients!  So easy, healthy and delicious!  I have been experimenting with different combinations and they all work well!  This has been my favourite so far!  Cinnamon and Vanilla is another flavour that can be used with apples if Pineapple isn’t your thing?

I eat this for dessert and crave it first thing in the morning!  It is so delicious and hearty in the mornings and keeps you going all day long!  If you want a vegan version, leave out the Greek Yogurt and just use Almond milk. It’s up to you and this recipe is extremely accommodating with any substitutions.

 Banana Pineapple Oats

A perfect dish for brunch and best of all, it is meant to be soggy!  So it lasts in your fridge for a couple of days.  I am crazy about it!  Top it off with some crunchy granola, seeds, nuts and some more fruit or berries if you want?  I have even seen parfait versions where, leftover cake or muffins are added! Sundae breakfast 😉  Enjoy this guilt free brekky!

A splendid way to serve brunch! This Banana Pineapple Overnight Oats is creamy, healthy and a perfect way to start your day. Top it off with your favourite granola, fruit and nuts and You can keep it in the fridge for a couple of days to spoon up again and again. Inspired by Oh She Glows
Recipe type: Breakfast, Brunch
Serves: 8
  • 2 cups rolled oats
  • 2 cups almond milk or any milk of your choice
  • 2 cups pineapple
  • ⅓ cup pure maple syrup
  • 3 tbsp flax seed meal
  • 2 small bananas, peeled & chopped
  • ½ cup Greek yogurt
  • ½ cup chopped walnuts
  • Pinch of salt
  • ½ cup of dried coconut
  1. Mix in a casserole dish and place in fridge overnight.
  2. Spoon it up in the morning and add any other toppings of your choice like berries, nuts or granola.
  3. Keeps in the fridge for 2-3 days.
