Cheese Bread Fluffy and delicious

It was abreakfast for champions kind of morning!’  And it sure feels good to be Canadian today!!!  The Olympics have officially ended and it is a pretty bittersweet occasion!  We just love the Olympics and it is hard to believe that we have to wait another 4 years till the next Winter games, but time always seems to fly by and we will be looking forward to the next one.  We are so proud of our athletes for their skill, ability and dedication! Mostly for following their dreams, representing our country and being the Nation’s BEST!  What a couple of exciting weeks it has been!

The boys were so interested in the games and it is wonderful to see such passion, endurance and strong-will from the athletes.  Through blood, sweat and tears they persevere!  I hope the boys gain something by seeing how hard each Olympia fought, it is always so inspiring for me to watch!

I have been wanting to make BREAD for a while now and thought that this was the perfect recipe for a beginner!  There is no yeast, no kneading, no rising and just a simple formula to make a delicious, fluffy morning breakfast or snack.

Cheese Bread

My alarm was set for 6:59am to watch the start of the 7:00 hockey game!  Now that is power sleeping to the very last-minute!!!  Bountin and I were rubbing our eyes for the first period unable to follow the puck, but it was still good to be up and support our Canadian Hockey Team who won in the finals against Sweden.

Thanks to Food and Drink compliments of the LCBO, I decided to make Cheese Bread!!!!  The original recipe has Olives in it, but I decided not to add any because the boys wouldn’t have been as eager to try it.  They are not the biggest fans of olives, but I know they will be ONE DAY!  

This recipe is incredibly easy!  And I even pushed my luck by substituting yogurt with the original buttermilk that it called for and it turned out fluffy and tasty!  I was worried that I would end up with a dense brick of a loaf, but it turned out perfectly!

This fluffy Cheese Bread is so easy to make and delicious! There is no yeast, no kneading, no rising and no waiting except for baking time.
Recipe type: Breakfast,Brunch,Snack,Appetizer
Serves: 8
  • 2 cups (500 mL) all-purpose flour
  • 2 tbsp (30 mL) sugar
  • 2 tsp (10 mL) baking powder
  • ½ tsp (2 mL) salt
  • ½ tsp (2 mL) coarsely ground black pepper
  • ½ tsp (2 mL) baking soda
  • 1 cup (250 mL) grated fontina cheese
  • ½ cup (125 mL) grated Parmesan cheese
  • 2 tbsp (30 mL) finely chopped parsley
  • 1 tbsp (15 mL) chopped fresh rosemary
  • ½ cup (125 mL) chopped black olives(I didn't use them)
  • ½ cup (125 mL) olive oil
  • 2 tsp (10 mL) garlic, finely chopped
  • 2 eggs, beaten
  • 1 tsp (5 mL) grated lemon rind
  • 1¼ cups (310 mL) buttermilk (I used plain yogurt and it turned out amazing)
  1. Preheat oven to 350°F (180°C).
  2. Grease an 8-cup (2-L) loaf pan. Line the base with parchment paper.
  3. Combine flour, sugar, baking powder, salt, pepper, baking soda, grated cheese, parsley, rosemary and olives in a large bowl.
  4. Combine oil, garlic, eggs, lemon rind and buttermilk(yogurt) in separate bowl.
  5. Stir wet ingredients into the dry until combined.
  6. Pour mixture into prepared pan and bake for 55 minutes or until a toothpick comes out clean.
  7. Cool in pan for 10 minutes. Turn out onto wire rack to cool.
  8. Makes 1 loaf
