Coconut Chicken Fingers


I have been experimenting with different recipes this week and none have been that WOW factor that I have been looking for, expect for this one. I made a Dulce de Leche dessert the other day which was ok, I only used a bit of the can and as I was transferring it to a jar I couldn’t resist and had a lick with my finger of the last bits dripping off. I felt it first and it didn’t feel too sharp so I dug right in to get a good portion on my finger.  Of course I sliced my finger a bit, it wasn’t bad, but there was a bit of blood and lesson learned.  How can anyone resist Dulce de Leche?

It reminds me of a story a friend told me, she was cleaning out her couch and found a piece of chocolate.  Well, she popped it in her mouth and it turned out it wasn’t chocolate and a piece of dirt, I love that story!  We are all human, we all do funny things and its a great reminder!

Today is a copycat recipe that my husband posted on my Facebook.  Is that a subtle hint?  Not only did it look delicious, but I couldn’t wait to try it! My original inspiration does come from one of my son’s play date’s.  His mom made Coconut Chicken for dinner and he loved it!  So since then my mind has been ticking, it is a great thing when my boy’s come home and want me to try to make something that they really enjoyed!

Chicken Stripping Station

It is simple, it beats frozen nuggets or strips any day!  And trust me, I do use the frozen stuff, but not sure why because it is so quick to whip up your own and so much more tastier!  And it tastes like chicken 😉  I believe that this recipe comes from Brett’s friend in Costa Rica so a major mucho Gracias to him!!!  It looked so good that Brett needed to share it with me and now I am sharing it with everyone else who has not yet seen it!  Truly easy and delicious!  And it goes perfectly with Sweet Chili sauce!  Enjoy and share away!!!

This is a delicious rendition of the ordinary Chicken Finger! Everything tastes better with Coconut, especially when it is roasted! Coconut Chicken, it is so tasty and simple to make! Dip it in Sweet Chili Sauce and you have a delicious quick meal!
Recipe type: Dinner, Family, Kids
Serves: 4
  • 2-3 large boneless, skinless chicken breasts
  • 2 large eggs
  • ¼ cup coconut milk or any milk will do
  • ½ cup flour
  • 1 cup panko bread crumbs
  • 1 cup shredded sweetened coconut
  • ½ tsp salt
  • ½ cup vegetable oil or coconut oil
  • Sweet Chili Sauce for dipping
  1. Preheat oven to 350F
  2. Cut chicken into strips, cutting diagonally so the ends are not too small.
  3. Prepare three separate bowls for breading your chicken
  4. Combine flour and salt and in bowl #1
  5. Whisk eggs and milk together in bowl #2
  6. Stir panko bread crumbs and coconut together in bowl #3
  7. Start coating the chicken strips in each bowl starting with the flour combination, then the egg and milk, and finally the bread crumb and coconut bowl.
  8. Heat ¼ c of vegetable oil in large skillet over medium/high heat.
  9. Place some of your chicken strips in the hot oil (do not overcrowd)
  10. Fry until they are golden brown and drain on a paper towel
  11. Bake them for 10 minutes at 350 degrees. (Cooking time may very depending on how thick your chicken is)
  12. Last but not least serve immediately with your chili sauce.
