The weather has been amazing and I am loving Autumn, perfectly warm days with invigorating mornings and evenings.  I was hoping to see some fall colours  just  a little north of home, but it is still quite green.  Every year I seem to miss out on the the prime colours of fall and before I know it the leaves are rusty, brown and have started falling off.  This year, I am on it!  While talking to my friend Melanie about life, food and elephant paths.  I started craving  her quinoa curry pineapple dish, I just had to have it and re-create it myself.

Its a long title, yet so deserving!  I just couldn’t leave out any of the main ingredients as they are all so key to this dish.  So much goodness and flavour goes into this recipe and the aroma makes your mouth salivate.  The combination of sweet, spicy, crunchy, fresh and savory is an explosion of flavour on the palette and also a healthy, comfort food!  Even my son liked it and I have tried everything to get him to eat quinoa, THIS did it for him!

Onions, garlic and spices

It is really easy and if you are a quinoa lover, this power grain fused with an Asian flare is a tasty choice.  It can be served hot or cold, as a main or side, I used chicken stock as it was all I had, but if you wanted a vegan, gluten-free meal – just use vegetable stock.  And if you have it, fresh pineapple would even be better.

The crunchiness from the Spicy Roasted Almonds give it the perfect texture, livens up the quinoa!  if you don’t have time to roast almonds, just chop them roughly and add them in raw.  It will still be good, but trust me…make the time and it is a great snack to munch on while cooking.

Spicy Roasted Almonds

The sauteed pineapple, spicy roasted almonds, coriander and green onion are tossed in at the end to make one big fiesta!  This actually keeps pretty well and doesn’t get soggy like some quinoa salads do. Thanks for introducing this to me Mel!

Curried Quinoa simmered in Coconut Milk tossed with Pineapple and Spicy Roasted Almonds

Curried Quinoa simmered in Coconut Milk tossed with Pineapple and Spicy Roasted Almonds
Recipe type: Curry, Grain, Salad, Vegan. Gluten-free
Serves: 4-6
  • Spicy Roasted Almonds
  • 1 cup whole almonds (I only use about half for this recipe, the rest for snacking)
  • 1 tablespoon extra virgin olive oil
  • 1½ teaspoons chili powder
  • ¼ teaspoon cumin
  • ¼ teaspoon coriander
  • ¼ teaspoon paprika
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • Quinoa
  • Extra-virgin olive oil
  • 1 onion, diced finely
  • 1 clove garlic, pressed
  • 1 tablespoon curry powder
  • 1 teaspoon cumin
  • 1 teaspoon garam masala
  • ½ teaspoon turmeric
  • ½ teaspoon ground coriander
  • ¼ teaspoon crushed chili flakes
  • 1½ cups vegetable stock or chicken stock
  • 1½ cups coconut milk
  • 1½ cups quinoa
  • 1 (14 oz) can pineapple tidbits drained and sauteed
  • 1 bunch green onions, finely chopped
  • 3 tablespoons fresh coriander, finely chopped
  1. Spicy Roasted Almonds
  2. Pre-heat the oven to 350°F.
  3. Mix almonds, olive oil and spices together in a bowl, evenly coat the mixture
  4. Spread the almonds out in a single layer on parchment paper on a cookie sheet
  5. Bake for 10 minutes, stir a couple of times
  6. Once cooled roughly chop ½ cup of almonds, set aside
  7. Quinoa
  8. In a saucepan over medium heat, combine diced onion, garlic, spices with vegetable or chicken stock and coconut milk.
  9. Bring to a simmer and add quinoa, reduce heat to low and cover.
  10. Cook for 15-20 minutes, or until all liquid is absorbed.
  11. Fold in green onions, coriander, sauteed pineapple and top with Spicy Roasted Almonds
  12. Serve warm or cold
