Sausage Rapini Tomato Soup

Aw summer time has made it’s appearance and the long frigid winter has quickly been forgotten as friendly strangers and hibernating neighbours reappear to greet each other and the warm weather.  It is surely a different place in Canada once the snow thaws!  Spring blossomed beautifully and suddenly we are hit with the humidity followed by events, parties, BBQ’s, baseball, soccer, pizza in the park, whatever it is we are ready to get outdoors and hang about!  It is truly a wonderful time of year!  So many disappear once July hits so June is crazy busy, but amazing busy!

We went up north to kick off the summer a little early!  We had the perfect weekend!  The weather was gorgeous, the bugs weren’t too bad and the kids played in the water all day long and the adults, well we ate like kings!  I will be writing more about this weekend soon!

Lots of birthday’s, Father’s day and just constant fun!  I have been embracing the warmth and social events, cooking up a storm when I can, but spending less time blogging and writing recipes.  Hoping to find some time soon!  Sure makes it hard when we have day light till almost 10pm, and the sun is shining! Cheers to Summer Solstice!  We have enjoyed a bit of lake time already and we are making everlasting memories for the boys with their friends. Last day of school today, a bittersweet end to the year and happy start to summer!

This is an extremely simple recipe, that is delicious, healthy and hits the spot!  Even in the summer time!  This soup is also a comforting meal so you don’t need anything else!  It is so tasty and we heart it! Enjoy, keep cooking, BBQ more and simplify your menu!  Take advantage of all the seasonal produce, get outdoors, eat well and live hard!

Sausage Rapini Tomato Soup

A delicious and simple to make Sausage Rapini Tomato Soup that is quick and easy! Healthy and delicious! We heart this soup and it is a meal in a bowl.

Serves: 4
Ingredients
  • 1 medium onion, chopped
  • 1 stalk of celery, chopped
  • 45 ml (3 tbsp) olive oil
  • 300 g (10 oz) hot Italian sausage, in ½” pieces
  • 1 can, 796 ml (28 oz) Italian plum tomatoes, chopped
  • 1 Litre (4 cups) chicken stock
  • ½ bunch rapini, trimmed, cut in 2” lengths
  • Salt and freshly ground pepper, to taste
  • ¼ cup grated Parmesan
Instructions
  1. In a soup pot, soften the onion and celery in the oil.
  2. Add the sausage and brown well.
  3. Add the tomatoes and the stock. Bring to a full boil, reduce the heat and simmer for 5 minutes.
  4. Add the rapini, salt and pepper.
  5. Return to the boil, reduce the heat and simmer for 5 minutes.
  6. *Be sure not to over-cook the rapini*
  7. Sprinkle with cheese and serve immediately with a spoon or a fork?
